TRIPLE CHOCOLATE PIE
MME

7 T butter	3 T sugar	1 1/4 C graham cracker crumbs	3 T cocoa

Mix together all ingredients.  Press into 10" pie pan.  Bake 8 minutes at 350o, cool slightly.

12 oz cream cheese	1 T Tia Maria	3/4 C sugar	8 oz sour cream
2 eggs	2 oz unsweetened chocolate, finely grated

Beat cream cheese and sugar until light and fluffy, beat in eggs, one at a time.  Stir in vanilla and Tia Maria.  Pour mixture into baked pie shell.  Bake at 350o for 30 minutes.  Cool 10 minutes.  Spread sour cream over top, sealing cheese mixture.  Sprinkle grated chocolate over sour cream.  Chill.

1/2 T instant coffee	1/2 t vanilla	2 T boiling water
2 T dark rum	4 oz semi-sweet chocolate	1 C whipping cream
4 eggs, separated	Cocoa or shaved chocolate	1/3 C sugar

Dissolve coffee in boiling water, add to chocolate, melt slowly, stirring constantly.  Beat egg yolks until thick, gradually add sugar and beat until light yellow, gradually add chocolate mixture.  Mix well.  Add vanilla and 1T rum.  Beat egg whites until stiff, stir 1/4 of egg whites into chocolate mixture, fold in remaining egg whites gently.  Chill.  Pile on pie.  Chill.  Whip cream and add remaining rum.  Spread over pie.  Sprinkle with cocoa or shaved chocolate.

CHOCOLATE TOFFEE PIE

1 1/4 C graham crackers, crushed	1/4 C sugar	1 C miniature chocolate chips
6 T melted butter	1/3 C sugar	1/4 C flour
1/8 t salt	1 1/2 C milk	1/2 C almond brickle pieces
2 egg yolks, slightly beaten	2 t vanilla	1 T butter
1 C whipping cream	1/4 C powdered sugar

Heat oven to 375o.  Combine crackers and 1/4 C sugar.  Stir in melted butter, toss to combine.  Stir in 1/2 C chocolate pieces.  Line pie pan with mixture, bake 6-9 minutes.  Cool.  Mix 1/3 C sugar, flour and salt.  Gradually stir in milk, remaining chocolate pieces, 1/4 C  almond brickle pieces and 1 T butter.  Cook, stirring, untikl thickened and bubbly.   Reduce heat and cook 2 more minutes.  Remove from heat.  Add egg yolks and cook 2 more minutes.  Stir in vanilla.  Pour into crust, chill.  Top with whipped cream, sugar and vanilla and remaining  almond brickle pieces. 

CHOCOLATE-GLAZED TRIPLE LAYER CHEESECAKE PIE

1 pkg Famous Chocolate cookies, crushed	3/4 C sugar, divided
1/4 C + 1 T butter, melted	16 oz cream cheese, softened
3 eggs, divided	1 T vanilla
2 oz semisweet chocolate, melted	1 1/3 C sour cream
1/3 C dark brown sugar	1 T flour
1/4 C chopped pecans	5 oz cream cheese, softened
1/4 C chocolate or almond liquer

Combine cookie crumbs, 1/4 C sugar, 2 T liquer,and butter, mix well.  Press into large buttered pie pan.  Save.  Combine 8 oz cream cheese and 1/4 C sugar.  Beat until fluffy.  Add 1 egg and 1 t vanilla.  Blend well.  Stir in melted chocolate and 1/3 C sour cream.  Spoon over crust.  Combine 8 oz cream cheese, brown sugar, and flour.  Beat until fluffy.  Add 1 egg and  1 t vanilla.  Blend well.  Stir in pecans.  Spoon over chocolate layer.  Combine 5 oz cream cheese and 1/4 C sugar, beat until fluffy.  Add egg, blend well.  Stir in 1 C sour cream, 1 t vanilla, and remaining liquer.  Spoon over praline layer.  Bake at 325o for 1 hour.  Turn off oven and leave cheesecake in oven for 30 minutes.  Open door of oven and leave cheesecake in oven an additional 30 minutes.  Cool.  Chill overnight.  Drizzle chocolate glaze over cold cheesecake.

GLAZE
6 oz semisweet chocolate	1/4 C butter	3/4 C powdered sugar
2 T chocolate or almond liquer	1 t vanilla

Combine chocolate and butter in top of double boiler, cook until melted.  Add remaining ingredients, stir until smooth.  Pour over cheesecake.


CARAMEL APPLE PIE

unbaked pie shell	 canned apple pie filling	vanilla	brandy extract
28 caramels	1/2 C 1/2 & 1/2 or evaporated milk	8 oz cream cheese
1/3 sugar		1 egg				

Combine caramels and milk.  Cook over low heat until caramels are melted.  Keep warm.  Empty pie filling into bowl, add vanilla and brandy extract.  Fill crust with apples.  Drizzle warm caramel sauce over apples.  Combine cream cheese, sugar, and egg.  Beat until smooth.  Spoon over apples, spreading slightly.  Can be sprinkled with 1/2 C chopped nuts.  Bake at 375 for 30-40 minutes.
